Blend oats, then bake apple-filled muffins without dairy, soy, or gluten.
Ingredients:
  • 2.5 cups gluten-free rolled oats
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 2 apples, chopped
  • 0.5 cup applesauce
  • 0.5 cup almond milk
  • 2 tablespoons vegetable oil
Instructions:
  • Preheat the oven to 375 degrees F (180 degrees C) while you prepare a 12-cup muffin tin with paper liners.
  • Blend oats in a food processor until finely ground. Add cinnamon, nutmeg, baking powder, and salt; mix well.
  • Combine apples, applesauce, almond milk, oil, and vanilla in a large bowl until well mixed. Gradually incorporate the oat mixture until it resembles cookie dough. Spoon evenly into muffin tins.
  • Place the prepared dish in the preheated oven until the tops bounce back when gently touched, for about 14 to 18 minutes. Allow the dish to cool for at least 5 minutes before serving.
