Stir-fried green beans with ginger, onions, and soy sauce—a quick and healthy side dish perfect for busy nights.
Ingredients:
  • 2 to 3 tablespoons canola or peanut oil
  • 1/2 to 3/4 pound fresh, tender green beans, cut into 1 1/2- to 2-inch pieces
  • 1 small onion, sliced root to stem (about 1 cup)
  • 1 (1-inch) piece fresh ginger, peeled and cut into matchsticks
  • 1 large garlic clove, sliced very thin
  • 2 tablespoons soy sauce (use gluten-free soy sauce for gluten-free version)
  • 1 tablespoon sugar
  • 1 teaspoon toasted sesame oil
  • Pinch freshly ground black pepper
Instructions:
  • Heat vegetable oil in a hot wok until shimmery: Preheat a wok or large frying pan on high heat for about 90 seconds, then add the vegetable oil and heat until shimmery (test by tossing in a sliver of onion, it should sizzle if hot enough).
  • Combine green beans, onions, and ginger in the pan and toss. Ensure sliced onions are separated. Let them sear for 30-90 seconds for some browning. Stir and let sit for another 30-90 seconds. Add sliced garlic, stir, and cook for 1 minute.
  • Pour the soy sauce and sugar mixture into the pan, turn off the heat, and toss the vegetables immediately to combine. Keep everything moving for a few seconds to prevent the sauce from burning as it caramelizes.
  • Drizzle the green beans and onions with sesame oil and sprinkle with black pepper. Give everything a final toss to combine, ensuring the beans remain slightly crisp. Allow them to cook a bit further in the residual heat before serving.
  • Serve the beans: Enjoy right away or let them cool to room temperature before serving.
