Tender roasted carrots infused with olive oil, orange juice, and cumin - a delectable vegan Christmas side dish.
Ingredients:
  • 1 pound young carrots, preferably with their green tops
  • 3 tablespoons olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon cumin seeds
  • sea salt and freshly ground black pepper to taste
Instructions:
  • Preheat your oven to a toasty 425°F (220°C).
  • Clean and peel carrots as needed. Arrange them on a parchment paper large enough to make a packet.
  • Combine olive oil, orange juice, and cumin seeds in a small bowl. Drizzle mixture over carrots, ensuring they are well coated. Enclose carrots in parchment paper and seal.
  • Roast in the oven until the carrots are tender, for approximately 45 minutes.
