Sticky roast baby carrots with orange and raisins

Carrots shine in this delicious and healthy side dish.
Ingredients:
  • 40.00 ml raisins
  • 86.63 gm orange juice
  • 2 garlic cloves, crushed
  • 2 bunches baby (Dutch) carrots, trimmed, scrubbed
  • 9.20 gm olive oil
  • 20.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Preheat your oven to 190°C/170°C fan-forced. Combine raisins, orange juice, sugar, and garlic in a bowl and let it sit for 5 minutes to enhance the flavors.
  • Spread the carrots in a roasting pan and generously drizzle with the zesty orange mixture. Toss until well coated, then drizzle with oil. Roast for 25 to 30 minutes until the carrots are tender and nicely golden. Finish by adding fresh parsley, seasoning with salt and pepper, and giving everything a final toss before serving.
