Vegan banana cake with raisins or nuts for a delicious twist! No eggs, milk, or butter needed.
Ingredients:
  • 1 tablespoon flaxseed meal
  • 2 tablespoons lukewarm water
  • 1 tablespoon ground cinnamon
  • 1.5 teaspoons baking powder
  • 1 pinch salt
  • 4 overripe bananas, mashed
  • 0.5 cup vegetable oil
  • 0.33333334326744 cup unsweetened soy milk
  • 1.5 teaspoons vanilla extract
  • 0.25 cup chopped walnuts
  • 0.25 cup raisins
Instructions:
  • Mix flaxseed meal and water in a cup, then let it sit for a moment.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a fluted tube pan, then dust it with flour.
  • In a large bowl, mix together flour, sugar, cinnamon, baking powder, baking soda, and salt.
  • In a separate bowl, mix together bananas, oil, soy milk, and vanilla extract. Add the flaxseed mixture and stir well. Gently incorporate the flour mixture in stages, being careful not to overmix. Finally, fold in the nuts and raisins before transferring the batter to the prepared baking pan.
  • Bake until a toothpick inserted comes out clean, for 40 to 50 minutes in the preheated oven.
