Spicy vegan black bean soup with creamy puréed beans, tomatoes, and veggies - a hearty and delicious treat for all!
Ingredients:
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 1 stalk celery, chopped
  • 4 cloves garlic, chopped
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 pinch black pepper
  • 4 cups vegetable broth
  • 4 (15 ounce) cans black beans, undrained, divided
  • 1 (15 ounce) can whole kernel corn
  • 1 (14.5 ounce) can crushed tomatoes
Instructions:
  • Prepare all the ingredients needed for the recipe.
  • In a large pot, heat olive oil over medium-high heat. Sauté onion, carrots, celery, and garlic for 5 minutes until fragrant. Sprinkle with chili powder, cumin, and black pepper, and cook for an additional 1 minute.
  • Combine the flavorful vegetable broth, 2 cans of beans, and sweet corn in the pot and heat until it reaches a boiling point.
  • Next, blend the remaining 2 cans of beans and tomatoes in a food processor or blender until smooth.
  • Once the soup reaches a boil, gently incorporate the ingredients, lower the heat to medium, and let it simmer for 15 minutes.
