Impress your loved ones with simple and delicious vegan enchiladas, perfect for any night of the week!
Ingredients:
  • 1 (14 ounce) package tofu, drained and mashed
  • 1.3333333730698 cups picante sauce
  • 1 onion, chopped
  • 1 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon ground black pepper
  • 12 corn tortillas
  • 2 (16 ounce) cans enchilada sauce
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking environment.
  • In a bowl, mix together tofu, picante sauce, onion, chili powder, garlic powder, cumin, and black pepper until well combined. Place 1 tortilla on a work surface and spread 4 heaping teaspoons of the mixture onto it. Roll up the tortilla and place it in a baking dish. Repeat with the rest of the tortillas and mixture. Pour enchilada sauce over the top.
  • Bake until golden and bubbling, approximately 20-25 minutes in the preheated oven.
