Vegan fajitas with flavorful tempeh instead of meat.
Ingredients:
  • 3 tablespoons olive oil
  • 1 red bell pepper, cut into thick slices
  • 0.5 medium onion, sliced
  • 1 teaspoon minced garlic
  • 1 (8 ounce) package tempeh, sliced
  • 0.25 cup water
  • 1 (1 ounce) package fajita seasoning (such as McCormick®)
Instructions:
  • In a large skillet over medium heat, warm up olive oil. Toss in red pepper, onion, garlic, and salt. Sauté until aromatic, about 5 to 7 minutes.
  • Combine tempeh, water, and flavorful fajita seasoning in a shallow bowl.
  • Place the seasoned tempeh in the skillet and cook over medium-low heat, stirring occasionally, until it absorbs the flavors, approximately 15 minutes. Then, reduce the heat to low to keep warm until serving.
