Try our new dairy-free gingerbread cookies made with light olive oil for a warm, spiced treat. Perfect for gifting or enjoying yourself!
Ingredients:
  • For the cookies:
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark brown sugar
  • 1/2  cup unsulphured molasses (not Blackstrap)
  • 5 tablespoons almond milk, or other plant based milk of your choice
  • 1/2 cup Filippo Berio Extra Light Olive Oil
  • For the icing:
  • 1 2/3 cups plus powdered sugar, sifted
  • 3 tablespoons almond milk
  • 1 teaspoon lemon juice
Instructions:
  • In a large mixing bowl, combine flour, ginger, cinnamon, nutmeg, baking soda, and salt. Add brown sugar and use your fingers to blend and break up any small lumps.
  • Combine dry ingredients, then make a well in the center. Pour in molasses, almond milk, and olive oil. Stir to mix well until dough forms.
  • Chill the dough by shaping it into a 1-inch thick rectangle and wrapping it in plastic. Refrigerate for 30 minutes up to overnight.
  • Preheat your oven to a toasty 350°F, then line 2-3 baking sheets with parchment paper.
  • Roll out the dough on a floured surface to about 1/8 inch thickness, making sure it's not sticking. Use cookie cutters to cut out shapes, then transfer them to baking sheets, spacing them 1 inch apart. Repeat with remaining dough scraps until it's all used.
  • Bake the cookies for 12 to 14 minutes until they are lightly browned on the bottoms. Transfer them to a wire rack to cool.
  • Prepare the icing by whisking together powdered sugar, almond milk, and lemon juice in a small bowl until silky smooth. For colored icing, transfer a portion to another bowl and gently mix in a drop of food coloring until reaching your desired hue.
  • Piping the icing Use a piping bag with a #3 or smaller tip to beautifully decorate the cookies.
