Vibrant vegan spinach salad with Japanese flair, boasting soy and sesame umami flavors - a refreshing twist on classic seaweed salad.
Ingredients:
  • 2 tablespoons toasted sesame seeds, divided
  • 1.5 tablespoons soy sauce
  • 0.5 teaspoon white sugar
  • 0.5 (8 ounce) package fresh spinach
  • 1 pinch salt
Instructions:
  • Spread 1 1/2 tablespoons of sesame seeds on a plate and crush them using the bottom of a pot or a heavy measuring cup. Transfer the crushed seeds to a bowl and mix in water, soy sauce, and sugar to create the dressing. Stir well.
  • 1. Bring a small pot of salted water to a boil. Add spinach and cook until just wilted, about 1 minute. Drain the spinach in a colander, rinse under cool water, squeeze out excess moisture, and cut into strips.
  • Transfer the cooked spinach to individual serving bowls. Drizzle the dressing over the spinach and sprinkle with the remaining sesame seeds for an elegant finish.
