Tangy vegan lemon curd, perfect for topping crepes, toast, and cookies.
Ingredients:
  • 0.75 cup white sugar
  • 2 tablespoons cornstarch
  • 0.5 cup chilled coconut milk
  • 0.25 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 3 tablespoons refined coconut oil
  • 0.125 teaspoon ground turmeric
Instructions:
  • Combine sugar and cornstarch in a small saucepan. Gently mix coconut milk before adding it to the saucepan along with lemon juice and lemon zest. Cook over medium heat, stirring often, until the mixture thickens and coats a spoon, for 6 to 8 minutes. Take off the heat and whisk in coconut oil and turmeric until smooth and well combined.
  • Place the curd in a medium bowl and refrigerate until firm, approximately 1 hour. Store in an airtight container in the refrigerator for up to 2 weeks.
