Vegan Lemon Poppy Scones

Vegan lemon poppy scones that are easily customizable and forgiving in proportions.
Ingredients:
  • 2 cups all-purpose flour
  • 0.75 cup white sugar
  • 4 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup vegan margarine
  • 1 lemon, zested and juiced
  • 2 tablespoons poppy seeds
  • 0.5 cup soy milk
  • 0.5 cup water
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and grease a baking sheet.
  • In a large bowl, combine the flour, sugar, baking powder, and salt. Use your hands to rub the margarine into the dry ingredients until the mixture resembles large grains of sand. Stir in poppy seeds, lemon zest, and lemon juice. Gradually mix in the combined soy milk and water until the batter is moistened to a thick, biscuit dough-like consistency. You might not need to use all of the liquid.
  • Drop heaping 1/4 cupfuls of batter onto the greased baking sheet, ensuring they are spaced 3 inches apart.
  • Bake in a preheated oven until golden, about 10 to 15 minutes.
