Family-favorite vegan mushroom stuffing perfect for Thanksgiving.
Ingredients:
  • 1 crusty baguette, cut into 1/2-inch cubes
  • 1 tablespoon olive oil, or as needed
  • 1 tablespoon ground thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic salt, or more to taste
  • 1 teaspoon ground white pepper
  • 0.5 cup vegan margarine
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup chopped fresh mushrooms
  • 3 cloves garlic, chopped, or more to taste
  • 1 (32 fluid ounce) container vegetable broth
  • 0.5 teaspoon ground white pepper
Instructions:
  • Place cubed bread on a baking sheet and cover with a paper towel. Allow to sit at room temperature until slightly stale, for at least 8 hours or overnight.
  • Heat your oven to a toasty 300 degrees F (150 degrees C).
  • Coat stale bread cubes in olive oil and generously season with thyme, rosemary, oregano, parsley, garlic salt, and white pepper before spreading evenly on a baking pan.
  • Bake in the preheated oven for 20 minutes, then stir and bake for an additional 20 minutes until crispy, checking often. Remove from the oven and set aside the homemade croutons.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a large baking pan.
  • In a large pan over medium heat, melt margarine until sizzling. Toss in celery, onion, mushrooms, and garlic. Sauté until tender, for roughly 5 minutes. Pour in broth and sprinkle in white pepper. Let it gently simmer for another 3 minutes. Fold in homemade croutons until coated, then transfer to a spacious bowl if needed. Finally, spoon the stuffing blend into the baking pan.
  • Roast in a preheated oven for approximately 40 minutes without covering.
