Enjoy a vegan ALT - open-faced English muffin with avocado, lettuce, and tomato.
Ingredients:
  • 2 tablespoons vegan mayonnaise (such as Fabanaise™)
  • 1 whole-grain English muffin, toasted
  • 1 avocado, sliced
  • 1 small tomato, sliced
  • 0.5 leaf lettuce, halved lengthwise
Instructions:
  • Spread a generous layer of creamy mayonnaise on each English muffin half. Arrange slices of ripe avocado and juicy tomato on top. Finish with a crisp layer of fresh lettuce.
