Try these delicious vegan orange-chocolate-oatmeal muffins for a satisfying egg-free dessert.
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup uncooked quick oats
  • 2 teaspoons baking powder
  • 2 (8.25 ounce) cans mandarin orange segments, drained, liquid reserved
  • 0.25 cup vegetable oil
  • 0.25 cup milk chocolate chips
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then prepare your muffin tin by either greasing it or lining with paper muffin liners.
  • Combine flour, sugar, oats, baking powder, and salt in a bowl and whisk until well blended.
  • Pour the 1 cup of reserved mandarin orange liquid and vegetable oil into the flour mixture and mix until well-combined. Gently fold in the oranges and chocolate chips, then spoon the batter into the muffin cups.
  • Bake until beautifully golden brown, around 25 minutes in the preheated oven.
