Decadent vegan Oreo stuffed chocolate brownies for a delicious and simple treat.
Ingredients:
  • 40.00 ml flaxseed meal
  • 150g dairy-free chocolate, chopped
  • 110g (1/2 cup) coconut oil
  • 8.80 gm vanilla extract
  • 150g (1 cup) plain flour
  • 155g (3/4 cup, firmly packed) brown sugar
  • 35g (1/3 cup) cocoa powder
  • 0.63 gm bicarbonate of soda
  • 16 Oreos
Instructions:
  • Preheat the oven to 160C/140C fan forced. Grease a 20cm square cake pan and line with parchment paper, leaving an overhang on the sides.
  • In a bowl, mix the flaxseed meal and 250ml (1 cup) water, then let it sit for 15 minutes to thicken. In a microwave-safe bowl, melt the chocolate and coconut oil together on High for 2 minutes, stirring occasionally until smooth. Mix in the vanilla afterward.
  • In a large mixing bowl, sift the flour, sugar, cocoa powder, and bicarbonate of soda. Create a well in the center. Add the chocolate mixture and flaxseed mixture. Gently fold everything together until just combined. Spread half of the mixture into the prepared pan.
  • Place a single layer of Oreos over the mixture, then spread the remaining mixture on top. Bake for 40 minutes, then allow it to cool completely in the pan before using the parchment paper to lift it out and cutting into squares.
