Tangy vegan pasta salad with olives, broccoli, tomatoes, pickles, and pickle juice for a burst of flavor.
Ingredients:
  • 1 (16 ounce) package rotini pasta
  • 1 cup chopped broccoli
  • 0.5 cup vegan mayonnaise
  • 1 (6 ounce) can sliced olives, drained
  • 3 large dill pickles, diced
  • 3 large tomatoes, diced
  • 0.25 cup dill pickle juice
  • 3 tablespoons minced fresh dill
  • 0.5 tablespoon dried dill
  • 1 teaspoon ground mustard
Instructions:
  • Boil a pot of salted water, then cook the rotini for 8 minutes until tender but still slightly firm. Drain and transfer to a large bowl.
  • Combine broccoli, mayonnaise, olives, pickles, tomatoes, pickle juice, fresh dill, dried dill, and mustard with the pasta in a bowl. Refrigerate for at least 3 hours, then stir before serving.
