Vibrant vegan basil pesto bursting with fresh basil and pine nut goodness.
Ingredients:
  • 500.00 ml, firmly packed fresh basil leaves
  • 1 garlic clove, chopped
  • 55g (1/3 cup) pine nuts, toasted
  • 125ml (1/2 cup) extra virgin olive oil
  • 2 tsp nutritional yeast (see note)
Instructions:
  • Blend fresh basil, garlic, and 1/4 cup of pine nuts in a food processor until finely chopped. While the processor is on, pour the oil in a steady stream until smooth. Transfer the mixture to a bowl and mix in the nutritional yeast and remaining pine nuts. Season with salt and pepper to taste.
