Simple vegan stir-fry using assorted vegetables for a quick, flexible meal.
Ingredients:
  • 2 tablespoons canola oil
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 0.5 cup sliced carrots
  • 0.5 cup purple cauliflower, chopped
  • 0.5 cup chopped fresh broccoli florets
  • 0.5 cup sliced fresh mushrooms
  • 4 tablespoons soy sauce
  • 0.75 cup water
  • 1 cup cherry tomatoes, halved
  • salt and freshly ground black pepper to taste
  • 1 tablespoon fresh basil, chopped, or to taste
  • 2 cups cooked rice
  • 1 teaspoon toasted sesame seeds
Instructions:
  • In a large skillet over medium heat, sauté onion in oil until soft and translucent, about 4 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add vegetables one by one - carrots, cauliflower, broccoli, and finally mushrooms - sautéing each for about 2 minutes. Pour soy sauce over the veggies, ensuring they are fully coated, and cook for an additional 2 minutes.
  • Pour water into a pot and stir in tomatoes, salt, and pepper. Bring to a boil, then lower the heat to a gentle simmer. Cook until vegetables are fork-tender yet slightly firm, about 3 to 5 minutes. Add basil right before finishing.
  • Present on a mound of fluffy rice, generously adorned with toasted sesame seeds.
