Vegan stir-fry with soy sauce, basil, and sunflower seeds over hot rice.
Ingredients:
  • 1 small onion, diced
  • 2 tablespoons canola oil
  • 1 clove garlic, diced
  • 0.5 cup diced carrots
  • 0.5 cup chopped cauliflower
  • 0.5 cup chopped broccoli florets
  • 0.5 cup sliced fresh mushrooms
  • 0.25 cup soy sauce
  • 0.75 cup water
  • 1 tomato, diced
  • 1 tablespoon chopped fresh basil, or to taste
  • salt and ground black pepper to taste
  • 0.25 cup unsalted sunflower seeds
Instructions:
  • In a large skillet over medium-high heat, sauté onion, canola oil, and garlic for 4 minutes. Add carrots, cauliflower, broccoli, and mushrooms individually, allowing 2 minutes between each addition. Stir in soy sauce and cook for an additional 2 minutes. Combine water, tomato, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer until veggies are fork-tender, around 5 minutes. Finish with a sprinkle of sunflower seeds before serving.
