Speedy ginger sesame broccoli stir-fry ready in under 30 minutes, perfect as a versatile side dish.
Ingredients:
  • 1 tablespoon sesame seeds
  • 1/2 cup chicken or vegetable stock (use vegetable stock for vegan option)
  • 1 tablespoon soy sauce (use gluten-free soy sauce for gluten-free option)
  • 1 tablespoon dark sesame oil
  • Peanut oil or canola oil
  • 1 pound broccoli florets, rinsed, patted dry, cut into bite-sized pieces
  • 2 cloves of garlic, minced (about 1 Tbsp)
  • 1 tablespoon minced fresh ginger
Instructions:
  • Toast the sesame seeds: Heat a nonstick saute pan over medium-high heat. Add sesame seeds and spread them out evenly in the pan. Cook until lightly browned, stirring occasionally, for about 2 to 3 minutes. Be attentive to prevent burning. Transfer the toasted sesame seeds to a small bowl. (Skip if using pre-roasted sesame seeds.)
  • Combine the stock, soy sauce, and sesame oil in a small bowl, and set aside.
  • In a large saute pan over medium-high heat, heat 1 tablespoon of peanut or canola oil. Add broccoli and stir-fry for 1 minute. Create a space in the middle of the broccoli, add ginger and garlic with an extra teaspoon of oil, saute for 30 seconds until fragrant, then incorporate with the broccoli.
  • Pour in the soy sesame oil mixture and simmer until broccoli is tender yet firm. Transfer broccoli to a bowl with a slotted spoon. Increase heat to high, reduce liquid to a couple tablespoons. Turn off heat, add broccoli back to the pan, sprinkle with toasted sesame seeds, and toss to coat. Serve hot.
