Beef with Broccoli

Delicious beef and broccoli stir-fry with a flavorful ginger-infused sauce.
Ingredients:
  • 2 cups uncooked instant brown rice
  • 1 3/4 cups water
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 1 teaspoon packed brown sugar
  • 1 tablespoon olive or vegetable oil
  • 1 teaspoon freshly grated gingerroot
  • 1 lb boneless beef round or tip steak, thinly sliced
  • 1 small onion, thinly sliced (1/2 cup)
  • Salt and pepper to taste
  • 1/2 lb fresh broccoli florets and peeled stems, cut into bite-size pieces (about 2 cups)
Instructions:
  • Prepare rice according to package instructions. In a small bowl, combine broth, cornstarch, soy sauce, and brown sugar until cornstarch is fully dissolved.
  • In a large nonstick skillet, heat oil over medium-high heat. Add gingerroot, beef, and onion, then sprinkle with salt and pepper. Sear for 2 to 4 minutes until beef is browned. Remove and cover to keep warm.
  • Combine the broth mixture and broccoli in the skillet and bring to a boil. Simmer for 5 to 10 minutes until the sauce thickens and the broccoli is tender. Stir in the beef mixture and heat through, stirring occasionally.
  • Serve the succulent beef and broccoli over a bed of fluffy warm rice.
