Lean steak marinated in zesty wasabi, tossed with vibrant veggies for a guilt-free stir fry.
Ingredients:
  • 2 tsp wasabi paste, plus extra
  • 2 tsp fresh ginger, finely grated
  • 60ml (1/4 cup) salt-reduced tamari
  • 4 (100g each) beef eye fillet steaks, fat trimmed
  • 2 x 180g pkts Ramen Noodles
  • 2 tsp mirin
  • 1 bunch gai lan (Chinese broccoli - see notes), trimmed
  • 4.60 gm peanut oil
  • 300g mixed mushrooms, wiped, halved if large
  • 1 zucchini, halved, thinly sliced diagonally
  • Baby herbs, to serve
Instructions:
  • In a glass dish, mix together wasabi, ginger, and 2 tablespoons of tamari. Add the beef and coat well. Cover and let it marinate for 30 minutes.
  • Preheat a chargrill over medium-high heat. Drain the steaks and lightly spray with olive oil. Grill for 2-3 minutes on each side for a medium doneness. Remove from the grill and let rest on a plate, covered, for 5 minutes before slicing.
  • Cook the noodles according to the package instructions, then drain them. Mix them with mirin and 2 tsp of the remaining tamari. Set them aside.
  • Prepare gai lan by cutting stems and leaves into 4cm lengths. Heat peanut oil in a wok over high heat. Quickly stir-fry mushrooms for 2 minutes. Introduce garlic and stir-fry for 30 seconds. Add gai lan stems and continue to stir-fry for 1 minute. Include the leaves and zucchini, stir-frying for 1-2 minutes or until they reach a tender-crisp texture. Finish by adding the remaining tamari and toss everything together.
  • Transfer the noodle mixture onto individual plates. Add the veggie mixture and beef on top. Sprinkle with herbs and serve with extra wasabi, if desired.
