Vegemite breakfast quesadilla

Elevate breakfast with a Vegemite tortilla topped with avocado, tomato, and fried eggs.
Ingredients:
  • 4 x 20cm round flour tortillas
  • 20.00 ml Vegemite
  • 250.00 ml Shredded Light Tasty Cheese
  • 2 Free Range Eggs
  • 1/2 avocado, chopped
  • 120g Perino grape tomatoes, quartered
Instructions:
  • Spread a savory layer of vegemite on two tortillas, then sprinkle generously with cheese before sandwiching with the remaining tortillas to create a mouthwatering quesadilla.
  • Preheat a non-stick pan over medium heat. Lightly spray one side of each quesadilla with olive oil. Cook each side for 2 minutes until golden and crispy. Cover to keep warm, then repeat with the rest of the quesadillas.
  • Return the pan to medium heat and give it a light spray of olive oil. Crack the egg into the pan and cook for 2-3 minutes until the yolk reaches the desired consistency.
  • Transfer the quesadilla onto a plate and garnish it with diced tomato, avocado, a fried egg, and a sprinkle of cracked black pepper.
