Delicious Thai veggie burgers on wholemeal buns with sweet chili drizzle. Guaranteed crowd pleaser!
Ingredients:
  • 1 (about 130g) carrot, finely shredded
  • 1 (about 120g) zucchini, finely shredded
  • 300g silken tofu, drained
  • 1 small (about 90g) brown onion, finely diced
  • 1 (about 75g) celery stick, finely diced
  • 40g (1/2 cup) dried (packaged) breadcrumbs
  • 56.00 gm Thai red curry paste
  • 82.50 ml firmly packed fresh basil leaves
  • Salt & ground black pepper
  • 4.60 gm olive oil
  • 4 large wholemeal bread rolls, split crossways
  • 8 mignonette lettuce leaves, washed, dried
  • 33.00 gm sweet chilli sauce or mild chilli sauce
Instructions:
  • Gently squeeze out excess liquid from the carrot and zucchini. Combine them in a bowl with tofu, onion, celery, egg, breadcrumbs, curry paste, chopped basil, salt, and pepper. Mix well with a wooden spoon. Shape into 4 patties about 2cm thick. Garnish with shredded basil.
  • Preheat grill to medium-high. In a large non-stick frying pan over medium-low heat, heat the oil. Add the patties and cook for 5 minutes on each side until golden and fully cooked.
  • Place the bread rolls under the hot grill and toast each side for 1-2 minutes until golden brown.
  • To plate, stack lettuce, patties, and basil on bread roll bases. Drizzle sweet chilli sauce and sandwich with the bread roll tops.
