Create a budget-friendly dish with tender noodles and crunchy vegetables.
Ingredients:
  • 60ml (1/4 cup) soy sauce
  • 350g firm tofu, cut into 1.5cm pieces
  • 100g dried rice vermicelli noodles
  • 9.20 gm peanut oil
  • 1 small red onion, halved, cut into thin wedges
  • 1 red capsicum, halved, deseeded, thinly sliced
  • 1 large carrot, peeled, cut into matchsticks
  • 22.00 gm sweet chilli sauce
  • 125.00 ml fresh coriander leaves
  • Lime wedges, to serve
Instructions:
  • In a shallow glass or ceramic dish, mix together the soy sauce and garlic. Add the tofu, ensuring it's coated well. Allow it to marinate for 5 minutes, stirring occasionally.
  • Place the noodles in a large heatproof bowl and cover them with boiling water. Allow them to sit for 5 minutes or until tender, then drain and cut into short lengths.
  • 1. Preheat a wok over high heat until smoking. Add oil, followed by onion, capsicum, and carrot. Stir-fry for 3 minutes until tender-crisp. Add tofu and marinade, and stir-fry for an additional 3 minutes.
  • Combine the noodles, sweet chilli sauce, and most of the coriander in the wok, toss well. Serve the stir-fry in bowls, garnish with the rest of the coriander, and lime wedges on the side.
