Spicy Baked Marinated Tofu

Elevate tofu's flavor with a zesty marinade of rice vinegar, peanut butter, ketchup, garlic, and soy sauce for a delicious surprise!
Ingredients:
  • 2 tablespoons rice vinegar
  • 2 tablespoons ketchup
  • 2 tablespoons peanut butter
  • 1 teaspoon low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon cayenne pepper, or to taste
  • fresh ground black pepper
  • 1 (16 ounce) package extra-firm tofu, cut into 1/2-inch cubes
Instructions:
  • Combine vinegar, ketchup, peanut butter, soy sauce, sesame oil, garlic, ground ginger, cayenne pepper, and black pepper in a small microwave-safe bowl.
  • Microwave the vinegar mixture until the peanut butter softens, for about 10 to 15 seconds. Stir until smooth.
  • Place tofu in a spacious bowl. Drizzle sauce over the tofu and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to a full day, stirring occasionally to ensure the tofu is evenly coated in the sauce.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Arrange tofu evenly on a baking sheet.
  • Bake until golden brown in a preheated oven for 10-15 minutes.
