Powdered peanut butter and hot honey marinated baked chicken thighs - a sweet and spicy delight. Perfect over rice, noodles, or potatoes.
Ingredients:
  • 4 bone-in chicken thighs
  • 0.25 teaspoon salt, or more to taste
  • 0.25 teaspoon ground black pepper, or more to taste
  • 6 tablespoons powdered peanut butter (such as PB2®)
  • 4 tablespoons water
  • 2 teaspoons hot honey (such as Mike's Hot Honey®)
  • 0.5 tablespoon soy sauce
  • 0.125 teaspoon garlic powder
Instructions:
  • Season both sides of the chicken thighs with a generous amount of salt and pepper.
  • In a large bowl, combine peanut butter powder and water until well mixed. Add hot honey, soy sauce, and garlic powder, then stir to combine. Add chicken thighs to the marinade, ensuring both sides are evenly coated. Cover the bowl and refrigerate for 8 hours or overnight.
  • Preheat your oven to 375°F (190°C).
  • Place the chicken thighs into a oven-safe dish.
  • Roast in the preheated oven until the chicken is fully cooked, 35 to 45 minutes. Use an instant-read thermometer near the bone to check for doneness; it should read 165 degrees F (74 degrees C).
