Create spicy Korean fried chicken with ginger-infused sauce for a flavor-packed meal full of excitement.
Ingredients:
  • Peanut oil, to deep-fry
  • 70g (1/2 cup) cornflour
  • 4.80 gm sea salt
  • 750g chicken nibbles
  • 100g (1/2 cup, firmly packed) brown sugar
  • 4cm-piece fresh ginger, peeled, cut into thin matchsticks
  • 60ml (1/4 cup) soy sauce
  • 60ml (1/4 cup) honey
  • 40.00 ml rice wine vinegar
  • 12.00 gm sesame seeds
  • 1 1/2-2 tsp dried chilli flakes
  • Steamed Asian greens, to serve
  • 1 spring onion (shallot), thinly sliced diagonally
Instructions:
  • Pour enough oil into a large saucepan to reach a depth of 8cm and heat it to 180°C over medium-high heat. Combine cornflour and salt in a large sealable plastic bag, then add the chicken. Shake well to coat the chicken evenly, making sure to shake off any excess coating.
  • Cook the chicken in two batches until golden and fully cooked, about 10-12 minutes. Use tongs to move the chicken to a wire rack on a baking tray lined with paper towel, then cover with foil to keep warm.
  • In a wok over high heat, bring water, sugar, ginger, soy sauce, honey, and vinegar to a boil. Then stir for 5 minutes over medium heat until slightly thickened. Reduce heat to low and simmer for 4-5 minutes until the sauce thickens. Finally, stir in sesame seeds and chilli flakes.
  • Coat the chicken in the flavorful soy mixture, then arrange the greens and chicken on plates. Finish off with a generous sprinkle of fresh spring onion.
