Irresistible sweet and spicy chicken wings.
Ingredients:
  • 750g chicken wing
  • 100.65 gm fish sauce
  • 70.95 gm caster sugar
  • 5 garlic cloves, finely chopped
  • 36.80 gm vegetable oil
  • Vegetable oil, for shallow frying
  • 85.80 gm cornflour
  • 1 long red chilli, finely chopped
  • Fresh coriander leaves, to serve
Instructions:
  • Trim and discard the wing tips using sharp kitchen scissors. Cut the chicken wings in half at the joint. In a glass or ceramic dish, combine fish sauce, sugar, and half of the garlic. Add the chicken and coat it in the mixture. Refrigerate the chicken for at least 2 hours, tossing occasionally in the marinade.
  • In a small frying pan over medium-high heat, heat 2 tablespoons of oil. Add the rest of the garlic and sauté for 1 minute until golden and fragrant. Drain on a paper towel-lined plate.
  • Preheat your oven to 160°C/140°C fan. Take the chicken out of the marinade, saving the marinade. Place the chicken on a paper towel-lined baking tray and gently pat dry with another paper towel.
  • Pour oil into a large, deep frying pan to reach 5mm up the side of the pan. Heat over medium-high heat. Place cornflour in a large resealable bag. Coat half the chicken by shaking in the bag, ensuring to shake off excess. Cook the chicken in the pan for 2 minutes on each side until golden. Transfer to a greased baking tray. Repeat the process with the remaining chicken and cornflour. Bake for 10 minutes or until fully cooked.
  • In a small saucepan over medium-high heat, bring the reserved marinade to a boil. Reduce heat to medium-low and simmer for 5 minutes until slightly thickened and syrupy. Serve the chicken in a dish, drizzle with the sauce, and sprinkle with fried garlic, chili, and coriander. Enjoy!
