Sweet and spicy chicken with asian slaw

Try this quick and spicy Asian chicken for a weeknight dinner.
Ingredients:
  • 8 RSPCA Approved Chicken Thigh Fillets
  • 60ml honey
  • 20.00 ml sriracha or chilli sauce
  • 1 lime, zested, juiced
  • 250.00 ml coriander leaves
  • 1/2 small wombok (Chinese cabbage), finely shredded
  • 1 carrot, peeled, cut into long matchsticks
  • 45g peanuts
  • 44.00 gm sweet chilli sauce
Instructions:
  • 1. Preheat the oven to 200°C and line a baking tray with parchment paper. 2. In a large bowl, mix together the chicken, honey, sriracha or chili sauce, half of the lime zest, and half of the lime juice. 3. Finely chop a quarter of the coriander leaves, then add them to the chicken mixture. Season with salt and pepper to taste.
  • Spread the chicken mixture evenly on the prepared tray. Bake for 25 minutes, turning occasionally, until the chicken is caramelized and fully cooked.
  • Mix wombok, carrot, onion, peanuts, sweet chilli sauce, remaining lime zest, lime juice, and coriander in a bowl. Serve with chicken.
