Honey and ginger chicken wings

Addictive sweet and spicy chicken wings.
Ingredients:
  • 12 (about 1kg) RSPCA Approved chicken wings
  • 60ml honey
  • 60ml soy sauce
  • 20.00 ml finely grated ginger
  • 12.00 gm sesame seeds
  • 1/2 wombok, finely shredded
  • 1/2 red onion, thinly sliced
  • 62.50 ml finely shredded mint
  • 1 tsp sesame oil
  • 5.00 gm caster sugar
  • 20.00 ml rice wine vinegar
  • 10.60 gm dark soy sauce, extra
  • Finely chopped spring onions, to serve
  • Steamed jasmine rice, to serve
  • Lime wedges, to serve
Instructions:
  • Preheat your oven to 200C and line a baking tray with parchment paper. Mix the chicken with honey, soy sauce, ginger, and sesame seeds in a large bowl. Spread the mixture on the tray. Bake for 30 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  • In a large bowl, mix wombok, onion, and mint. In a small bowl, whisk together sesame oil, sugar, vinegar, and extra soy sauce. Pour the dressing over the wombok mixture and mix well. Serve the salad on plates, topped with spring onion, and with rice and lime wedges on the side.
