Delicious baked vegetable samosas made with puff pastry and served with homemade curry sauce.
Ingredients:
  • 2 teaspoons vegetable oil
  • 1 onion, diced
  • 1 tablespoon curry powder
  • 1 tablespoon mustard seeds
  • 2 teaspoons cumin seeds
  • 0.5 cup vegetable broth
  • 2 small potatoes, cut into small cubes
  • 1 carrot, cut into small cubes
  • 0.25 pound frozen peas
  • 1 (17.5 ounce) package frozen puff pastry, thawed
  • 1 egg, lightly beaten
  • 2 cups mayonnaise
  • 0.66666668653488 cup sour cream
  • 0.5 cup lemon juice
  • 0.5 cup horseradish
  • 2 tablespoons curry powder, or more to taste
  • salt and ground black pepper to taste
Instructions:
  • In a large frying pan over medium heat, sauté onion, curry powder, mustard seeds, and cumin seeds in oil for 3 minutes. Add broth and potatoes; cook until tender, about 3 to 5 minutes. Stir in carrot and peas; cook for an additional 2 minutes. Remove from heat and let the filling cool.
  • Preheat your oven to 400 degrees F (200 degrees C) and grease a baking sheet.
  • - Roll out puff pastry on a work surface and cut into 16 thin rounds. Add 2 to 3 tablespoons of filling on each round. - Brush edges of pastry with beaten egg and press together using a fork to seal. - Arrange samosas on the baking sheet and bake as directed.
  • Bake until pastry is puffed and golden brown, about 12-15 minutes in the preheated oven.
  • Mix together mayonnaise, sour cream, sugar, lemon juice, horseradish, curry powder, salt, and pepper in a bowl. Chill the sauce until ready to serve with the samosas.
