Crispy cigar-shaped samosas are a versatile and easy-to-make snack perfect for any occasion. Enjoy them as appetizers, finger foods, or as a tasty salad topping for a satisfying lunch.
Ingredients:
  • 10 cardamom pods
  • 6 cloves
  • 2 teaspoons Madras curry powder
  • 2 cloves of garlic
  • 3 cm piece of ginger
  • 1 onion
  • 2 medium carrots
  • ½ a bunch of fresh coriander (15g)
  • 25 g unsalted butter
  • 75 g red lentils
  • 1 x 400 g tin of chickpeas
  • 100 g frozen peas
  • 1 lemon
  • 1 x 270 g packet of filo pastry (6 sheets)
  • olive oil
  • 4 sprigs of fresh mint
Instructions:
  • Start by crushing the cardamom pods in a mortar and pestle, extracting the inner seeds and discarding the husks. Grind the seeds with cloves, sea salt, and curry powder until fine. Next, peel and finely chop garlic, ginger, onion, carrots, and coriander stalks. Sauté in a large pan with butter and two-thirds of the spice mix until soft and golden. Add lentils, chickpeas, and enough water to cover, then simmer for 40 minutes until thick. Season, mix in frozen peas, and let cool. Add chopped coriander leaves and lemon juice. Prep the filo sheets by brushing with oil, sprinkling with spice mix, cutting into strips, and filling with the mixture. Roll into cylinders and bake at 180ºC/350ºF/gas 4 for 15-20 minutes until crispy. Serve with mint leaves and yogurt dips like mango or cucumber-mint. Season dips before serving.
