Indian-inspired samosa pot pie - a fusion of comforting flavors in a cozy dish.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 cup whole-wheat pastry flour
  • 2 tablespoons vegetable oil
  • 6 tablespoons ice-cold water, or more as needed
  • 1.25 pounds potatoes, peeled and quartered
  • 1 tablespoon black or yellow mustard seeds
  • 1 teaspoon curry powder, or more to taste
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cumin
  • 0.125 teaspoon red pepper flakes
  • 1.5 teaspoons vegetable oil
  • 1 cup diced onion
  • 0.5 cup diced carrot
  • 1 tablespoon minced garlic
  • 1 cup low-sodium vegetable broth
  • 1 cup frozen peas
  • 2 teaspoons white sugar
  • 2 tablespoons milk
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect baking environment.
  • In a bowl, combine all-purpose flour, pastry flour, and salt. Mix in 2 tablespoons of vegetable oil until clumps form. Gradually add cold water, 1 tablespoon at a time, until the dough holds together. Shape into a ball, cover with a damp towel, and set aside.
  • In a large pot, boil potatoes in salted water until tender, about 15 minutes. Drain and transfer to a large bowl, then mash until chunky.
  • Combine mustard seeds, curry powder, ground ginger, cumin, and red pepper flakes in a bowl, stirring until well mixed.
  • In a skillet over medium heat, warm up 1 1/2 teaspoons of vegetable oil. Sauté onion, carrot, and garlic in the oil until the carrot is tender, for about 5 minutes.
  • Transfer the onion mixture to one side of the skillet. Introduce the seasoning mixture into the skillet and cook until the spices are toasted and aromatic, about 30 seconds. Combine the onion mixture with the spices; then add vegetable broth and peas, stirring well.
  • Combine the carrot mixture with mashed potatoes, incorporate sugar, mix well, then season generously with salt and pepper before spreading the filling evenly into a 9-inch pie plate.
  • Place the dough on a floured surface and roll it into an 11-inch circle. Lay it over the pie filling, press out any air pockets, trim excess dough, crimp the edges, make a vent 'X' in the center, and then brush with milk.
  • Place the pie in the preheated oven and bake until the crust turns a beautiful golden brown, usually taking 40 to 50 minutes. Allow the pie to cool for 5 minutes before serving.
