Indulge in a savory beef samosa pie with flavorful potatoes, sweet peas, and flaky Pillsbury™ pie crust - a perfect Asian-inspired meal for your loved ones.
Ingredients:
  • 2 large baking potatoes (about 1 3/4 lb)
  • 2 tablespoons olive oil
  • 3 large onions, finely chopped (3 cups)
  • 3 cloves garlic, finely chopped
  • 2 lb ground beef
  • 71/2 teaspoons curry powder
  • 11/2 cups frozen sweet peas (from 12-oz bag), thawed
  • 1/2 cup beef broth
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons sambal oelek chili paste or red pepper sauce
  • 1 teaspoon salt
  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
Instructions:
  • Preheat your oven to 425°F. Use a fork to pierce the potatoes all over. Place the potatoes on a microwavable paper towel in the microwave. Cook on High for 15 minutes, turning once, until they are tender. Cover with a clean kitchen towel and let them sit for 5 minutes. Peel and mash the potatoes, leaving some chunks. Set aside.
  • In a 12-inch ovenproof skillet, heat oil over medium-high heat. Sauté onion for 5 minutes until soft, then add garlic and cook for 1 minute. Add beef and curry powder, cook for 8 to 10 minutes until beef is fully cooked. Drain and return mixture to skillet.
  • Combine mashed potatoes, peas, flavorful broth, fresh cilantro, spicy chili paste, and a pinch of salt, mixing until fully incorporated.
  • 1. Gently unwrap pie crust and place it on a clean work surface. Carefully lay the crust over the delicious filling in the skillet. Use a sharp knife to create steam vents in the crust. Bake for 25 minutes, or until the crust is beautifully golden brown.
