Curry beef triangles

Indulge in budget-friendly curry beef pastries for a delicious appetizer.
Ingredients:
  • olive oil
  • 350g beef mince
  • 1/2 small onion, chopped
  • 1 garlic clove, crushed
  • 3.75 gm curry powder
  • 40g pea
  • 2.50 gm cornflour
  • 8 sheets filo pastry
  • natural yoghurt, to serve
Instructions:
  • 1. Preheat the oven to 200°C. Line a baking tray with non-stick baking paper. 2. Heat a dash of olive oil in a large non-stick frying pan over high heat, then add the mince and onion. Sauté for 2-3 minutes until browned. Stir in the garlic and curry powder and cook for an additional minute.
  • Add the peas and 1/3 cup water, then simmer on high heat for 2-3 minutes until the liquid reduces.
  • Mix cornflour with 1 tablespoon of water and add to pan along with salt and cracked black pepper. Cook until mince mixture thickens (1-2 minutes), then transfer to a small bowl and refrigerate until cold.
  • Lay out four sheets of filo pastry on a flat surface and lightly spray each sheet with oil. Stack the sheets on top of each other. With the longest side in front of you, cut the stack into 5 strips. Repeat this process with the remaining sheets of pastry.
  • Place a generous spoonful of mince mixture in the top left corner of a filo strip and fold diagonally to create a triangle shape. Keep folding in a triangular pattern, trimming any extra pastry as needed. Repeat with the rest of the filo strips and mince mixture.
  • Spritz each triangle with oil spray, arrange on the baking tray, and bake until golden and crispy, for 12-15 minutes. Enjoy with a side of natural yoghurt.
