Whip up a tasty red curry beef noodle stir-fry for a fast dinner option after work.
Ingredients:
  • 110g pkt Suimin Noodles with Red Curry Beef Flavour
  • 18.20 gm peanut oil
  • 1 small brown onion, finely chopped
  • 250g 3 Star Beef Mince
  • 1 carrot, peeled, cut into matchsticks
  • 1 bunch choy sum, coarsely chopped
  • 2 spring onions, thinly sliced diagonally
  • Coriander leaves, to serve
Instructions:
  • Cook noodles and vegetables as instructed on the packet, setting aside the flavor paste. Drain noodles, saving 1/4 cup (60ml) of the cooking liquid.
  • In a wok or large frying pan, heat oil on high heat. Sauté onion and beef for 5 minutes until beef is cooked through. Stir in the flavor paste sachet and cook for an additional minute until fragrant.
  • Now, toss in the carrots and choy sum into the wok, stir-frying for 2 minutes until they are softened. Next, add in the noodles, reserved liquid, and spring onions. Stir everything together until well combined. Serve the mixture into separate bowls and garnish each with fresh coriander. Enjoy!
