Samosa puffs with cumin raita

Delicious spicy beef samosa puffs with cumin raita by Faiza Rehman, MasterChef Australia alum - perfect for entertaining.
Ingredients:
  • 36.80 gm vegetable oil
  • 1 small onion, finely chopped
  • 5.00 gm ground cumin
  • 1/4 tsp turmeric
  • 1 tsp garam masala
  • 1 cm fresh ginger, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 long fresh green chilli, finely chopped
  • 300g beef mince
  • 21.00 gm lemon juice
  • 62.50 ml frozen peas
  • 62.50 ml finely chopped fresh coriander
  • 3 sheets Frozen Puff Pastry Sheets
  • 1 egg yolk
  • 41.20 gm milk
  • 24.00 gm sesame seeds
  • 200g plain yoghurt
  • 42.00 gm lemon juice
  • 2 garlic cloves, crushed
  • 1 tsp dried mint
Instructions:
  • In a frying pan over medium-high heat, warm the oil. Sauté the onion for 4 minutes until caramelised. Introduce spices, ginger, garlic, and chilli, and sauté for 1 minute until fragrant. Add the mince, breaking up any lumps with a wooden spoon, and cook until done. Season with salt and pepper. Mix in lemon juice and peas. Fold in coriander, then let it cool completely.
  • Preheat your oven to 200C and prepare 2 baking trays with baking paper. Quarter a sheet of frozen pastry. Fill one pastry square with 2 tablespoons of the mince mixture. Fold it into a triangle, sealing the edges. Transfer to the lined baking tray.
  • In a bowl, combine the egg yolk and milk, then gently brush the mixture over the samosa and sprinkle with sesame seeds. Repeat with the remaining pastry and filling. Bake the samosas for 25-30 minutes until they are golden on the outside.
  • Prepare the cumin raita by mixing all the ingredients in a bowl and adding salt to taste. Enjoy alongside hot samosas.
