Samosa Patties with Mint Relish

"Spice up your Indian dinner with these quick and delicious potato patties - ready in just 45 minutes!"
Ingredients:
  • 3 medium baking potatoes (1 lb), peeled, cut into 1-inch pieces
  • 1 tablespoon butter or margarine
  • 1 medium onion, chopped (1/2 cup)
  • 1 teaspoon finely chopped gingerroot
  • 1 serrano chile, seeded, finely chopped
  • 1/2 cup frozen sweet peas (from 12-oz bag), thawed
  • 2 tablespoons chopped cashews
  • 1 teaspoon garam masala
  • 1 egg white, slightly beaten
  • 2 tablespoons vegetable oil
  • 1/2 cup loosely packed fresh mint leaves, finely chopped
  • 1/4 cup loosely packed fresh cilantro, finely chopped
  • 3 tablespoons lime juice
Instructions:
  • In a 2-quart saucepan, boil potatoes in enough water to cover. Simmer for 20 minutes until tender. Drain the potatoes and lightly mash them with a potato masher, leaving them slightly lumpy. Set aside.
  • In a 10-inch nonstick skillet, melt butter over medium heat. Cook and stir onion, gingerroot, and 1 chile for about 6 minutes until onion is tender. Add peas, cashews, garam masala, and 1/2 teaspoon salt, cook until heated through.
  • Combine the onion mixture with the potato mixture until fully incorporated, then mix in the egg white. Form the mixture into 4 patties, each about 3/4 inch thick.
  • After cooking patties for 10 minutes, turning once, until golden brown on each side, wipe the skillet clean with paper towels and heat oil over medium heat.
  • In a small bowl, combine the relish ingredients. Serve the patties with the relish.
