Create a quick and flavorful Indian-inspired skillet dinner with veggies, couscous, and peanuts in 25 minutes!
Ingredients:
  • 1 medium red bell pepper, cut into thin strips
  • 1/4 cup vegetable or chicken broth
  • 1 tablespoon curry powder
  • 1 bag (1 lb) frozen broccoli, carrots and cauliflower (or other combination)
  • 1/2 cup raisins
  • 1/3 cup chutney
  • 2 cups hot cooked couscous or rice
  • 1/4 cup chopped peanuts
Instructions:
  • Heat oil in a 12-inch skillet over medium-high heat. Sauté bell pepper for 4 to 5 minutes, stirring often, until tender.
  • Combine broth, curry powder, salt, and vegetables in a pot. Bring to a boil and cook for about 4 minutes, stirring occasionally, until vegetables are tender-crisp.
  • Combine the raisins and chutney, then spoon over fluffy couscous. Garnish generously with crushed peanuts.
