Try vibrant veggie and egg fajitas for a satisfying meal!
Ingredients:
  • 6 eggs
  • 1/3 cup milk
  • 1 tablespoon margarine or butter
  • 1 medium bell pepper, cut into 1/4-inch strips
  • 1 medium onion, thinly sliced
  • 1 tablespoon from 1 packet (1 oz) Old El Paso™ Fajita Seasoning Mix
  • 4 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1/2 cup thick & chunky salsa
Instructions:
  • Whisk together eggs and milk; set aside.
  • In a large skillet, melt the margarine over medium-high heat. Saute the bell pepper, onion, and seasoning mix in the melted margarine for about 4 minutes, stirring occasionally, until the vegetables are tender. Remove the vegetables from the skillet and keep them warm.
  • Lower the heat to medium and carefully pour the egg mixture into the skillet. Allow the mixture to start setting at the bottom and sides. Gently lift the cooked portions with a spatula to let the uncooked parts flow to the bottom. Refrain from stirring constantly. Cook for 3 to 4 minutes until the eggs are cooked through but still slightly moist.
  • Place a generous dollop of the egg mixture in the middle of each tortilla, then add the vegetables on top. Fold the right and left sides of the tortilla over the filling, making sure they overlap. Finish by topping each fajita with 2 tablespoons of salsa.
