Engage kids in cooking with our simple vegetable frittata recipe.
Ingredients:
  • Olive oil spray
  • 200g sweet potato (kumara), peeled, cut into 1cm pieces
  • 120g green round beans, trimmed, halved
  • 80g (1/2 cup) frozen peas
  • 1 shallot, trimmed, thinly sliced
  • 125ml (1/2 cup) low-fat milk
  • 4 eggs, lightly whisked
  • 60g (1/4 cup) Cottage Cheese
  • 35g (1/3 cup) coarsely grated cheddar
Instructions:
  • Preheat grill to medium-high. Spray a 20cm non-stick ovenproof frying pan with oil and heat on medium heat. Cook sweet potato until slightly softened, about 3-4 minutes. Add beans, cook for 1 minute, then add peas and cook until tender. Stir in shallot, season with salt and pepper.
  • In a jug, vigorously combine milk, egg, and cottage cheese. Pour mixture over vegetables, ensuring even distribution. Lower heat to medium-low and cook for 8 minutes until slightly firm.
  • Sprinkle the cheddar on top and grill for 3-5 minutes until golden brown.
