Vegetable frittata

Ingredients:
Olive oil spray
200g sweet potato (kumara), peeled, cut into 1cm pieces
120g green round beans, trimmed, halved
80g (1/2 cup) frozen peas
1shallot, trimmed, thinly sliced
125ml (1/2 cup) low-fat milk
4eggs, lightly whisked
60g (1/4 cup) Cottage Cheese
35g (1/3 cup) coarsely gratedcheddar
Instructions:
Preheat grill to medium-high. Spray a 20cm non-stick ovenproof frying pan with oil and heat on medium heat. Cook sweet potato until slightly softened, about 3-4 minutes. Add beans, cook for 1 minute, then add peas and cook until tender. Stir in shallot, season with salt and pepper.
In a jug, vigorously combine milk, egg, and cottage cheese. Pour mixture over vegetables, ensuring even distribution. Lower heat to medium-low and cook for 8 minutes until slightly firm.
Sprinkle the cheddar on top and grill for 3-5 minutes until golden brown.
