Vegetable Frittata with Cheddar

Cheesy vegetable frittata packed with broccoli, cauliflower, carrots, and low carbs.
Ingredients:
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 0.25 cup diced carrots
  • cooking spray
  • 6 large eggs
  • 2.5 ounces shredded Cheddar cheese
  • 0.25 cup low-fat half-and-half
  • salt and ground black pepper to taste
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Place cauliflower, broccoli, and carrots in a microwave-safe steamer, add water, and microwave until veggies are crisp-tender, approximately 3 minutes. Drain excess water before serving.
  • Coat a 9-inch pie pan with nonstick spray, then evenly distribute the vegetables in the pan.
  • Whisk eggs in a bowl until they turn light and lemon-colored. Mix in Cheddar cheese, half-and-half, salt, and pepper. Pour the mixture over the vegetables.
  • Cook in the warm oven until eggs are cooked through, for about 35 minutes.
