Whip up a veggie-packed frittata with mozzarella in a snap using a cast iron skillet.
Ingredients:
  • 3 tablespoons bacon grease, divided
  • 1 head broccoli, chopped
  • 1 onion, diced
  • 1 green bell pepper, chopped
  • 0.5 (6 ounce) can minced black olives
  • 2 teaspoons minced garlic
  • 1 teaspoon chopped fresh oregano
  • 1 teaspoon chopped fresh basil
  • salt and ground black pepper to taste
  • 6 large eggs
  • 1 cup shredded mozzarella cheese
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Preheat a cast iron skillet over gentle heat. Add 2 tablespoons of flavorful bacon grease. Mix in broccoli, onion, bell pepper, olives, garlic, oregano, basil, salt, and pepper. Cook until veggies are tender, about 7 to 10 minutes. Take off the heat.
  • Whisk eggs in a bowl with a fork until light and fluffy. Mix in mozzarella cheese and the cooked vegetable mixture, stirring until well combined.
  • Gently warm the skillet over low heat, then add the rest of the bacon grease. Carefully pour the egg mixture into the skillet.
  • Bake until golden brown and set, about 20-25 minutes in the preheated oven.
