Cast Iron Skillet Pizza

Make crispy golden-brown skillet pizza with store-bought dough and red sauce for a quick weeknight meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound (454g) pizza dough, store-bought or  homemade
  • All-purpose flour, for dusting
  • 1 1/2 cups (170g) shredded low-moisture mozzarella cheese
  • 1/3 cup pizza sauce, store-bought or  homemade
  • 2 tablespoons finely grated Parmesan cheese
  • 3 to 4 fresh basil leaves
Instructions:
  • Preheat the oven to 475°F with racks in upper and lower thirds. Coat a 10-inch cast iron skillet with olive oil.
  • On a floured surface, effortlessly stretch the dough into an 8-inch disc. Fit it into the skillet and delicately press to shape. Gently dimple the dough with your fingertips.
  • 1. Sprinkle half of the cheese over the dough, followed by spooning the pizza sauce over the cheese. Make sure to spread it evenly using the back of a spoon, leaving some areas without sauce is perfectly fine. Finally, top it with the remaining cheese.
  • Bake the pizza: Preheat the skillet on the bottom oven rack until the edges are golden brown and the cheese has melted, about 15 to 20 minutes.
  • Place the skillet under the broiler on high heat until the cheese is lightly browned, about 1 minute. Keep a close watch to prevent burning.
  • Finish the pizza: Once out of the oven, generously sprinkle Parmesan cheese on top and allow it to cool for 5 minutes. Use a spatula to loosen the edges, then carefully transfer the pizza to a cutting board. Tear fresh basil leaves over the pizza, cut into slices, and enjoy.
