Indulge in a decadent deep-dish pizza with a cast iron skillet-baked, thick, chewy crust loaded with savory sausage, pepperoni, and gooey mozzarella.
Ingredients:
  • 2.25 teaspoons active dry yeast
  • 0.5 teaspoon brown sugar
  • 1.25 cups warm water (110 degrees F (43 degrees C))
  • 2 cups all-purpose flour
  • 0.25 cup butter
  • 2 teaspoons garlic salt
  • 1 tablespoon grapeseed oil

  • 0.33333334326744 cup bulk pork sausage
  • 1 (3.5 ounce) link bulk Italian sausage
  • 0.5 cup pizza sauce
  • 0.33333334326744 cup shredded mozzarella cheese
  • 24 slices pepperoni
  • 1 tablespoon butter, softened
  • 0.125 teaspoon Italian seasoning
  • 0.125 teaspoon garlic powder
Instructions:
  • Combine yeast and brown sugar with warm water in a stand mixer bowl fitted with a dough hook. Allow it to sit for 5 to 10 minutes until the yeast softens and creates a creamy foam.
  • Set the mixer to its lowest setting. Gradually incorporate 2 cups of flour, adding 1/2 cup at a time. Mix in 1/4 cup butter and garlic salt. Gradually add the remaining 2 cups of flour until the dough is smooth and elastic, kneading for 5 to 7 minutes.
  • 1. Grease a large glass bowl with 1 tablespoon of grapeseed oil. Shape the dough into a ball and place it in the bowl, rotating to coat all sides with oil. 2. Spray a piece of plastic wrap with cooking spray and place it over the bowl, oiled-side down. Cover the bowl with a towel and let the dough rise in a warm area until doubled in volume, around 45 minutes. 3. After rising, gently deflate the dough by punching it down and allow it to rest for 20 minutes.
  • Once the dough has been punched down, heat a skillet over medium heat. Cook bulk sausage until browned and crumbly, approximately 5 minutes. Transfer the cooked sausage to a bowl using a slotted spoon, leaving the drippings in the skillet.
  • Cook the sausage link in the flavorful drippings until beautifully browned and fully cooked, approximately 10 minutes. Ensure it reaches an internal temperature of 160 degrees F (70 degrees C. Slice the sausage before proceeding.
  • Preheat the oven to 400°F (200°C) and generously grease a 12-inch cast iron skillet with 2 tablespoons of grapeseed oil.
  • Press the dough into the prepared skillet, ensuring it covers the base and sides. Use a fork to poke holes in the dough to prevent air bubbles. Spread pizza sauce evenly over the crust. Sprinkle half of the mozzarella cheese over the sauce, followed by half of the bulk sausage, half of the sliced sausage, and half of the pepperoni. Repeat the layers of meat once more, then finish with the remaining mozzarella cheese on top.
  • Place the pizza on the bottom rack of the preheated oven and bake until the crust turns golden brown, approximately 25 minutes. Once done, brush the crust with melted butter, and sprinkle with Italian seasoning and garlic powder. Transfer the pizza from the skillet, allow it to rest for 3 to 5 minutes, and then slice before serving.
