Deep-dish potato and salmon quiche recipe

Salmon, potato, peas, and creme fraiche baked in a buttery pastry - a decadent, cheesy quiche.
Ingredients:
  • 2 sheets frozen shortcrust pastry, just thawed
  • 350g baby coliban (chat) potatoes
  • 2 x 200g can salmon in spring water, drained
  • 120g (3/4 cup) frozen peas
  • 40.00 ml chopped fresh dill
  • 80g (1 cup) coarsely grated cheddar
  • 8 eggs
  • 200ml tub crème fraîche (see note)
  • Lemon wedges, to serve
Instructions:
  • Prepare a 6cm-deep, 20cm round springform pan by greasing it. Cut out a round shape from one pastry sheet with the pan base as a guide and line the prepared pan, gently pressing it up the sides. Cut the remaining pastry sheet into two 6cm-wide strips and line the sides of the pan with them. Fill any gaps with a 6 x 6cm strip cut from the pastry offcuts, pressing firmly to seal. Remove any excess pastry. Chill in the fridge for 10 minutes.
  • Preheat the oven to 190C/170C fan forced. Place the pan on a baking tray, line it with baking paper, and fill with pastry weights or rice. Bake for 12 minutes, then remove the paper and weights or rice. Continue baking for another 10 minutes until light golden. Let it cool for 10 minutes. Reduce the oven to 180C/160C fan forced.
  • Place potatoes in a saucepan and cover with cold water. Bring to a boil over high heat and cook for 10-12 minutes until tender when pierced with a knife. Drain and let cool before thinly slicing.
  • In a bowl, mix together the salmon, peas, dill, and 75g (3/4 cup) of cheddar. Layer the potatoes and salmon mixture into the pastry case. In a jug, whisk together the eggs and crème fraîche, season with salt and pepper. Pour the egg mixture over the filling. Sprinkle the remaining cheddar on top.
  • Bake the quiche for 1 hour and 10 minutes, or until the filling is just set. Let it cool in the pan for 15 minutes before serving.
  • Enjoy your delicious quiche warm, accompanied by refreshing lemon wedges.
