Indulge in a delicious winter mash by combining sweet parsnips and potatoes, or make thin parsnip chips by deep-frying slices peeled with a veggie peeler.
Ingredients:
  • 800g potatoes, peeled, coarsely chopped
  • 2 large (about 500g) parsnips, peeled, quartered lengthways, thinly sliced
  • 20g butter, at room temperature
  • 60ml (1/4 cup) pouring cream
Instructions:
  • In a large saucepan, simmer the potatoes and parsnips in water until tender, about 15 minutes.
  • After draining the parsnip mixture, transfer it back to the pan. Mix in the butter and use a potato masher to achieve a smooth consistency. Stir in the cream and season with salt and pepper.
