Create a gourmet restaurant-style dinner at home that will delight everyone.
Ingredients:
  • 36.40 gm olive oil
  • 1 garlic clove, crushed
  • 55g (3/4 cup) coarse fresh breadcrumbs
  • 42.00 gm fresh lemon juice
  • 4 chicken thigh fillets, fat trimmed
  • 150g pkt baby spinach
  • 60g mozzarella, cut into four 1cm pieces
  • 4 prosciutto slices
  • 250ml (1 cup) chicken style liquid stock
  • 37.60 gm sour cream
  • 300g green round beans, trimmed
  • 4 Sebago or Golden Delight potatoes, peeled, chopped
  • 2 medium parsnips, peeled, chopped
  • 50g butter
  • 125ml (1/2 cup) milk
Instructions:
  • In a large frying pan over medium heat, heat half of the oil. Cook the garlic until aromatic, about 1 minute. Add the breadcrumbs and cook until crisp and golden, for about 4-5 minutes. Stir in the lemon juice and cook until the juice evaporates, about 30 seconds.
  • Preheat your oven to 180°C. Spread out the thigh fillets. Place baby spinach and mozzarella in the center of each fillet. Roll them up to seal the filling inside. Wrap each fillet with a piece of prosciutto to hold it together.
  • In a large frying pan over medium-high heat, warm up the remaining oil. Brown the chicken for 2 minutes on each side. Then, place the chicken in a baking dish and pour enough stock to reach 1cm up the side. Bake for 20 minutes. Finally, transfer the chicken to a plate and whisk in the sour cream into the cooking liquid.
  • For the mash, boil the potato in a large saucepan for 5 minutes. Then add the parsnip and continue cooking for 10 more minutes until both are tender. Drain, return to the pan, and mix in butter and milk. Mash until smooth, and season with salt and pepper.
  • Steam the beans over simmering water in a saucepan for 2-3 minutes until bright green and tender-crisp.
  • Serve the mash and beans on plates. Place the chicken over the mash, drizzle with sour cream, and sprinkle breadcrumb mixture over the beans.
